YOU'LL NEED...

10 shrimps
1 avocado
1 bunch cilantro
5 spring roll wrappers
salt and pepper
flour
water
cooking oil
3 tbsp mayonnaise
3 tbsp sweet chili sauce
1/4 lemon
iceberg lettuce

LET'S GET COOKING...

Mix together 1 tablespoon of flour with 1 tablespoon of water and set aside.

Peel and devein the shrimps. Belly side up, make 4-5 shallow cuts along the length of the belly, being careful not to slice all the way through. Peel and slice avocado.

Cut the spring roll wrappers in half to make triangles. Place one shrimp onto the center of the triangles, making sure the tail sticks out of the wrapper, followed by a slice of avocado and a few sprigs of cilantro. Season with salt and pepper. Roll the wrappers up, securing the edges with the flour/water mixture.

Deep fry in oil at 325 degrees F until crispy and golden brown.

To make the sauce, combine mayonnaise and sweet chili sauce.

Serve with lettuce leaves, lemon slices and sauce.

A quick peruse of challah french toast recipes, the main theme running through all of them, was to allow the challah to soak up the egg/milk/vanilla mixture. Which I don't do with lighter breads as they tend to get super soggy (ewww).

A mixture of some of the leftover apricot paste (apricot puree, orange juice, orange blossom water, honey), thinned with honey, to a drizzle. A pinch of cinnamon to finish.

One part of my addition to today's Easter meal at my sister's. Yes I know the photo is slightly over exposed, I like it!

No figs in the house, dried apricot paste though (I have no idea why, it was just there). The juice from Seville and Cara Cara oranges, a tich of honey, some water, bubbled until it was nice and pasty.

Using the technique and challah bread recipe from the above link. Worked out lovely!!!

I also mixed some of the leftover Orange/Apricot/Honey paste with butter and honey to make a spread for the challah.

I had only originally planned on making one loaf. Bit of an oops when I was making the challah. I had been debating between two recipes, this one calling for two eggs, the other 5 eggs, moment of brain fart. Adjust ingredients into two loaves. I'm actually pleased this happened as my first attempt at braiding wasn't quite so pretty. This ones better but I have some experience to gain. Think I was being too gentle with the dough. I'll hopefully remember next time.

Best get going, buns in the oven and just about time to butter them as the are almost finished cooking. Might or might not get a photo of them. >.>

Fortunately, therapeutic herbal treatments can have a profound influence on respiratory afflictions. Herbs can be used to allay coughing and sore throat, and may be useful for respiratory infections and asthma. Plants that have expectorant, demulcent, antitussive, and antimicrobial actions are most effective for these purposes, and can be consumed as herbal teas or tinctures.

Expectorant herbs thin and expel mucus that can congest the air passages. Demulcent herbs contain mucilage which soothes dry, irritated tissues; they are specific treatment for a sore throat or a dry cough. Antitussive agents reduce respiratory spasms and are most beneficial for coughs which have a dry, irritated character and for the treatment and maintenance of asthmatic conditions. Antimicrobial agents are important to include in a respiratory formula to address the source of the infection.

Angelica (Angelica archangelica)
Angelica root acts as an antispasmodic to the smooth muscle tissues. A decoction (or 30-60 drops of the extract) can be used to allay respiratory spasms, which can be beneficial for dry, irritating coughs and asthma. The root also has expectorant and antimicrobial properties; because it is a warming herb, angelica is most specific for lung conditions with white, clear, or cloudy mucus.

Contraindications: Do not consume angelica during pregnancy since it has emmenogogue actions. Angelica may also cause photosensitivity in some individuals.

Coltsfoot - Eastern Coltsfoot (Tussilago farfara)
Coltsfoot leaves and flowers have demulcent, emollient, and expectorant properties. A tea of the leaves can be useful for lung ailments such as bronchitis, laryngitis, asthma, whooping cough, and sore throat. A traditional European tea recipe used for the conditions previously listed contains equal parts of coltsfoot, mullein, hyssop, and peppermint. Like comfrey and borage, coltsfoot contains small amounts of liver-toxic pyrrolizidine alkaloids (P.A.s). The effects of the P.A.s are cumulative.

Contraindications: Coltsfoot consumption should be avoided during pregnancy, or limited to short term use, due to its pyrrolizidine alkaloid content. There is little known about the effects of the P.A.s on the fetus. Any person with debilitating liver conditions or compromised liver function should also avoid using coltsfoot.

Elecampane Root (Inula helenium)
Elecampane can be used as a respiratory tonic and can also help to speed the recovery process for lingering lung infections. It is specific for respiratory conditions with excessive bronchial secretions, such as bronchitis, and for irritation of the trachea and bronchi that results in persistent and irritable coughing. Elecampane exerts a soothing expectorant action, but also acts as an astringent to reduce excess mucous. This root is both a diuretic and a diaphoretic. Drink a hot decoction of the root to induce sweating and to help break a fever.

The chia seed has been having a moment for what seems like the past five years. That’s probably because its uses are limitless.

My favorite everyday way to use chia seeds is in place of flax seeds in a Flax Egg, Simple Fruit Compote and Grain Free Granola.

But upon discovering you could also use them to make creamy, dreamy pudding, I had to give it a go. Simple, 6 ingredient chocolate chia seed pudding that's naturally sweetened and so thick and creamy. Simple, loaded with nutrients and perfect for breakfast, a snack or dessert!

Ingredients
1 1/2 cups (360 ml) Almond Breeze Almondmilk Original Unsweetened
1/3 cup (63 g) chia seeds
1/4 cup (24 g) cacao or unsweetened cocoa powder
2-5 Tbsp (30-75 ml) maple syrup if not blending (can sub 5-9 dates, pitted if blending)
1/2 tsp ground cinnamon (optional)
1/4 tsp sea salt
optional: 1/2 tsp vanilla extract
Instructions
Add all ingredients except sweetener to a mixing bowl and whisk vigorously to combine. If not blending (which I preferred!), sweeten to taste with maple syrup at this time. If blending, you can sweeten later with maple syrup or dates.
Let rest covered in the fridge overnight or at least 3-5 hours (or until it's achieved a pudding-like consistency).
If blending, add to a blender and blend until completely smooth and creamy, scraping down sides as needed. Sweeten to taste.
Leftovers keep covered in the fridge for 2-3 days, though best when fresh.
Serve chilled with desired toppings, such as fruit, granola or coconut whipped cream.

Chicken Caesar Pasta Salad

INGREDIENTS

10 oz farfalle pasta (“bow-tie” pasta)
3 chicken breasts
3 Tbsp. olive oil
Salt, to taste
Pepper, to taste
2 heads romaine lettuce, cut in 1-2 inch pieces
1 cup grape Tomatoes, cut in half
1 cup croutons
Parmesan, to taste
3/4 cup caesar salad dressing

PREPARATION

Boil water, add the pasta and cook according to package instructions. Drain water, and let the pasta chill. Meanwhile, season each of the chicken breasts with 1 Tbsp. olive oil, salt and pepper. Grill for six to eight minutes on each side. Cut the chicken into bite size pieces. In a large bowl combine pasta, romaine lettuce, tomatoes, croutons, parmesan, and caesar dressing. Toss gently and serve! Enjoy!

This was one of those dishes that just came to me one night while at work. Myself and another coworker were sitting, rolling silverware, pondering what to eat for dinner. I mentioned wanting to come up with a great trout dish. We wracked our heads together and agreed on this taste combination. Think about it, you walk into a pub and what do you see? Beer on tap and probably some sort of bowl of pretzels or nuts awaiting and tempting you to munch on which in turn causes you to drink more.  The combination is priceless. So, why not combine those great flavors into one dish? So here goes, a delicious, light and flaky pretzel crusted trout with an orange ale sauce. Taproom Trout.

Ingredients:


2 trout filets split
2 cups pretzels
1/2 cup cornmeal
1/2 bottle of ale of choice
1 orange
4 tbs butter
Salt/pepper

1. Take pretzels and blend them in a food processor. Combine with cornmeal and spread onto a plate.

2. Take trout filets and press meat side down into the pretzel cornmeal mixture.

3. In a large skillet melt 2 tbs of butter and brown the trout on meat side.

4. In a 350 degree oven place the trout filets skin side down on a baking dish and bake for roughly 8 minutes.

5. Meanwhile in a sauce pan pour in the 1/2 bottle of ale and simmer until reduced.

6. Zest the orange and place in the pot. Juice half of the orange and also place into the pot.

7. Drop in 2 tbs of butter and simmer until the sauce thickens and becomes shiny. Salt to taste.

8. Remove trout from oven. Place on plate and drizzle some of the orange ale sauce over.

     This was an amazing trout dish. I had my cousin over for dinner and she loved it. Pretty sure you will too.

Prep Time: 15 min
Cook Time: 10-15 min
Serves: 2
